One of my favorite inshore species of fish to catch is the Florida pompano. This shallow water bottom feeding fish is a scavenger on the bottom looking for sand fleas, shrimp, and small crabs. It is this crustacean diet that allows for the pompano to have such great tasting meat. The Florida pompano is the perfect fish to pair with our lemon butter shrimp sauce.

Ingredients For Citrus Pompano Fillets:

  • Fresh Pompano Fillets (4-8 fillets for a family of four)
  • 2 tsp olive oil
  • 3 tsp lemon juice
  • 4-5 Tbsp orange juice
  • 1/2 tsp garlic - finely chopped
  • 2 tsp fresh parsley - chopped
  • 5-6 basil leaves

  • 1 cup dry white wine
  • 1 lemon, quartered and chopped
  • 1 tablespoon minced shallots
  • 1 tablespoon minced garlic
  • 1/2 cup heavy cream
  • 2 sticks plus 1 teaspoon unsalted butter, cut into pieces
  • 1 teaspoon salt
  • 1/8 teaspoon freshly ground white pepper
  • 1 tablespoon finely chopped fresh parsley
  • 8 ounces raw peeled and deveined shrimp, chopped
  • 1 teaspoon Old Bay Seasoning

The first thing that will need to be done is the preparation of the pompano fillets. The marinade can be made the night before. Allow for the fillets to marinate for a minimum of 4 hours. Add your olive oil in a mixing bowl and add your lemon and orange juice. Sprinkle in your salt and pepper then stir to mix. Add your garlic and spices (parsley and basil leaves). Place the marinade into a Ziploc bag and add your pompano fillets and refrigerate until cooking.

The lemon butter shrimp sauce needs to be prepared at the same time of cooking on the fish. The pompano fillets will take around 8-10 minutes to cook on a medium to high grill settings. In a large pan add your shallots, lemons, garlic, and wine. Apply heat and bring to a boil. Once the mixture begins to boil, reduce the heat to a simmer, and allow for it to cook for another 10 minutes. Every few minutes stir to ensure the sauce does not burn. After 3 minutes of cooking, add the cream and continue cooking. When the sauce has reduced by half, add your butter, salt, and pepper. If the sauce gets too hot, remove it from the heat for a minute then place back on.

Next thing you will need to do is cook your shrimp in a small pan. Toss your raw shrimp in old bay seasoning for added flavor. Add butter to your pan and set to a medium to high heat. Cook your shrimp until they are a pinkish color for 5-6 minutes. Once they are finished, add them to your garlic sauce and keep warm until the fish is completed. Pre-heat the grill to a medium to high heat and place your pompano fillets on it for cooking. Cook each side for 2 to 3 minutes to ensure proper cooking. Your fillets should obtain the grill marks you want, be careful not to burn or dry the fish out. Once the fish is completed, it is ready for plating. Just add your lemon garlic shrimp sauce over each fillet and serve. This combination of flavors is one that will have you craving for more!
